2. Scoop out all the guts.
3. Lay the pepper slice in a greased, hot pan.
4. Crack an egg into the pepper.
5. Lay a slice of tomato on the egg.
6. Crack an egg on top of the tomato.
7. Fry the eggs.
8. Serve (with toast).
My husband isn't a fan of sunny side up eggs, so this is what I did.
|I sliced the peppers into slices about 1/2" thick|
|With the red pepper I cut it a little thicker because it is smaller around. I also cut the membrane away to make more room.|
|I cut two slices of the red pepper. Here is one of the slices before removing the membranes.|
|And here's the orange slice.|
|I put olive oil in the pan and heated it up. I put the pepper slices in the pan, and added one egg into each pepper slice. As you can see, the egg whites went right under the pepper slices.|
I also cut up potatoes and fried them in olive oil.

|I didn't add a slice of tomato (hubs is not a tomato fan) or fresh dill.|
