Super Bowl Lunch

Are you all being good and healthy for your Super Bowl snacks?

We were...

We had Twice Baked Sweet Potatoes inspired by Lindsay's Healthy Sweet Potato Skins at Pinch of Yum 
I baked the sweet potatoes, scooped them out, added hmmm... maybe 1/2 cup of shredded mozzarella cheese, chopped Italian parsley, and {real} bacon bits.  I put that mixture back into the skins and topped with more mozzarella cheese (it's what we had on hand.)

We also had HEALTHY Baked Chicken Nuggets from Chef in Training.  The recipe calls for whole wheat bread crumbs and panko (bread crumbs).  I used what I had on hand.  (I finished our container so now I can buy whole wheat :)  I also used the Parmesan that we had in the fridge... you know that kind you sprinkle (ok... dump on) on your spaghetti?  I put just a touch of sea salt and oodles of black pepper in the bread crumb mixture.  I put the bread crumb mixture in a zip lock type bag and put the chicken in and shook it up! :) 

And... we had fruit!
I cut up a fresh pineapple (It was SO SWEET!!  :)
Cherries, Seedless Grapes, and Strawberries.  (Did you see how big those are?!?!)
