What do you do for dinner when you have red, yellow, and orange bell peppers and eggs? You make something that tastes REALLY GOOD!!

1. Slice a pepper.
2. Scoop out all the guts.
3. Lay the pepper slice in a greased, hot pan.
4. Crack an egg into the pepper.
5. Lay a slice of tomato on the egg.
6. Crack an egg on top of the tomato.
7. Fry the eggs.
8. Serve (with toast).

My husband isn't a fan of sunny side up eggs, so this is what I did.
I sliced the peppers into slices about 1/2" thick |
With the red pepper I cut it a little thicker because it is smaller around. I also cut the membrane away to make more room. |
I cut two slices of the red pepper. Here is one of the slices before removing the membranes. |
And here's the orange slice. |
I put olive oil in the pan and heated it up. I put the pepper slices in the pan, and added one egg into each pepper slice. As you can see, the egg whites went right under the pepper slices. |
I also cut up potatoes and fried them in olive oil.

I didn't add a slice of tomato (hubs is not a tomato fan) or fresh dill. |
But it was Oh SO Good!! |
