Bell Pepper Eggs

What do you do for dinner when you have red, yellow, and orange bell peppers and eggs?  You make something that tastes REALLY GOOD!!

1. Slice a pepper.
2. Scoop out all the guts.
3. Lay the pepper slice in a greased, hot pan.
4. Crack an egg into the pepper.
5. Lay a slice of tomato on the egg.
6. Crack an egg on top of the tomato.
7. Fry the eggs.
8. Serve (with toast).

My husband isn't a fan of sunny side up eggs, so this is what I did.


I sliced the peppers into slices about 1/2" thick

With the red pepper I cut it a little thicker because it is smaller around.  I also cut the membrane away to make more room.

I cut two slices of the red pepper.  Here is one of the slices before removing the membranes.

And here's the orange slice.


I put olive oil in the pan and heated it up.  I put the pepper slices in the pan, and added one egg into each pepper slice. As you can see, the egg whites went right under the pepper slices.
To help soften the peppers and to cook the eggs more thoroughly I put a couple tablespoons of water into the hot pan and covered it with a lid.  This creates steam to aid in the cooking of the peppers and eggs.

I also cut up potatoes and fried them in olive oil.

I didn't add a slice of tomato (hubs is not a tomato fan) or fresh dill.

But it was Oh SO Good!!
